Real Chics, Real Food: Baked Meatballs (Weight Watcher Friendly recipe)

So Mr. Man claims that my last go round of meatballs were not his favorite. I honestly change the recipe every single time. I have also become obsessed with the food processor that I got at our engagement party, so sometimes I even grind up all types of veggies along with my usual seasonings into the meat just to get some veggies in my system. (Note: you cannot even taste them. And I use spinach, carrots, tomatoes, onions, and peppers when I do this.)

But this time around, I went back to basics. This is probably the recipe I used the very first time I attempted to make meatballs, and they were a huge hit!

Ingredients:
Double Package of Ground Beef (approximately 2lbs of 90% lean/10%fat)
2 Eggs
1/2 Onion
1 Packet of Onion Soup Mix
Grill Mates Steak Seasoning (to taste)
1 cup seasoned breadcrumbs
Paprika (for the color, so I add a few tablespoons)
1/2 cup chopped canned spinach

Directions:
Mix all of the ingredients into the ground beef. I generally combine all of the dry ingredients and then add in the eggs, but that's just my preference. 

Next, it is time to get messy! Before you start, pre-grease a large baking dish. Now form the meatballs into mini-balls and place in the pre-greased pan. The size depends on what you like. I was able to get over 50 meatballs out of the 2lb package of beef. 

After all of the meat is formed, bake them at 350 degrees until they are nice and brown (approximately 30 minutes). 

Each meatball is only 41 calories or 1 WW Points+.

***You can also freeze the meatballs for later if you like. I form the meatballs on a greased plate and then freeze them like that for at least 2 hours before I place them into a freezer safe bag. When it's time to cook, I put them into a greased frying pan and cook them on low until I see that they are defrosted, and then turn it up and add in my sauce.***

  2. Baked is a TAD bit easier. You don't have to worry about them breaking up as much when you have to turn them in the skillet...

    But both are yummy.
